There are always some tomatoes that do not make the grade. If we have the time we like to sun dry these. The tomato is first washed then cut open just enough so that it fans open when you lay it on the drying tray. Out in the sun the fruit can dry in about four days. We then leave it out in piles that are shaded to finish drying. Once completely dry the fruit is frozen for a week. It can then be stored in air tight bags at ambient temperatures until the winter.
