4 cucumbers, peeled and seeded1 small garlic clove 1 small onion or 2 scallions 2 tsp. salt ½ tsp. cayenne pepper 1 c. yogurt a few sprigs of mint, if desired
Chop cucumbers, garlic, and onion/scallions. Place in a blender with salt, cayenne pepper, & yogurt. Blend until frothy. Chill. Add mint, if desired.
