My (Molly's) dear friend Faye told me this is what she eats when she needs a quick, late dinner. I tried it, & it’s amazing! Shred one or two sweet potatoes (more if it’s for a whole family). Heat olive oil in a frying pan over medium heat. Add sweet potatoes and cook, stirring frequently, until fully cooked (just a few mins.!). Season to taste with salt and pepper. Remove from heat and serve with yogurt (for an extra treat, mix cumin or curry powder into the yogurt!). Thanks, Faye!
