Very versatile! You can store this in the fridge for several months. 1 oz (about ¾ cup) dried tomatoes—your box this week has about 2 oz. 1 cup water 1-2 tsp light olive oil
Put tomatoes & water in sm., heavy saucepan. Bring to a boil. Lower heat & simmer gently for 15 mins. Transfer tomatoes & liquid to food processor. Process for several mins, until sauce is fairly smooth & skins are broken up. If necessary, add more water to loosen the mass & make it easier to purée. Transfer purée to a clean jar, film the top with oil, and cover tightly. Store in fridge.
