2 lbs. fresh spinach, stir-fry mix, and/or mustard greens, stemmed & coarsely chopped3 Tbsp. vegetable oil 1 Tbsp. toasted sesame seed
The sauce: 2 Tbsp. dark sesame oil 3 Tbsp. vinegar 3 Tbsp. soy sauce
Stir the sauce ingredients together. Heat the vegetable oil in a large skillet or wok. Add the greens & stir fry until tender (don't overcook!). Pour off the excess liquid. Toss the greens with the sauce, sprinkle with sesame seeds, & serve.
