|Celebrate tomato season with this simple and delicious salad!
3-4 Heirloom tomatoes, small, variety of colors
|1 cloves Garlic, finely minced|
|1/4 C Sweet Onion or purple onion, diced|
|1/2 TBSP Fresh Parsley, chopped|
|1/2 TBSP Fresh Basil, chopped (or 1 tsp dried basil)|
|1 TBSP Red Wine Vinegar|
|1 1/2 TBSP Extra Virgin Olive Oil|
|Salt to taste ( 1/2 tsp)|
|1/4 tsp Black Pepper, freshly ground
Cut cores from the tomatoes; slice each tomato into wedges. Combine with remaining ingredients in a large bowl; toss to blend well.
Cover and refrigerate for at least 1 hour before serving.
