3-4 large banana peppers 4 oz. goat cheese
4 oz. fresh grated parmesan cheese
2 tbsp fresh basil, chopped
1/4 lb italian sausage or chorizo (optional)
salt and pepper to taste
Get grill going or preheat over to 375. Wash and dry banana peppers and set aside to dry. If using italian sausage or chorizo, remove from casing and fully cook in skillet with a touch of oil. Set aside and allow to cool completely. Mix cheeses, meat, basil and a touch of salt and pepper in a bowl. Cut peppers lengthwise and scoop out seeds and membranes. Spread cheese mixture into peppers and grill cheese side up for 10 minutes until peppers start to char a bit. If putting in the oven, bake for about 15 minutes then turn on the broiler for about 5 minutes at the end, then take out of the oven to cool.
