Last week I took a trip down to Stockton to visit a large freezer storage company. They are holding 800 quart tubs of our pasture raised chicken stock. This was produced for us by Grimaud farms in Stockton. We will be selling it soon at the farmers market. Ready as soon as we get our little freezer unit running that we were given a month ago. We decided to give this a try after learning that many of our spent hens were bought by restaurants such as Chez Panisse to make stock. On the way home I snapped a shot of 24 tons of organic processing tomatoes heading north to a cannery. This is where your organic ketchup comes from.
