1. In the box (in order of what to eat first):

Strawberries OR Valencias - These strawberries are the first of the season and may be a little under-ripe. They'll sweeten up and get better as Spring moves into summer. Eat these ASAP, rinse the clam-shell container, and return the container when you pick up your next box. You can stack the container in the cooler. If you received valencia oranges, these are best for juicing. Use ASAP to take advantage of their ripe, juiciness.

Lettuce - Keep damp in an airtight container in the fridge. Keeps for one week.

Spinach - Store loose in an open container in the crisper, cool as soon as possible. Spinach loves to stay cold.

Arugula - Wash and dry well. Wrap with a damp paper towel and store in a glass container in the fridge. Lasts up to 5 days.

Spring Garlic - Store in your crisper. Best used within a week but may last a little longer.

Beets or Radishes - Cut the tops off to keep beets or radishes firm (be sure to keep the greens!) by leaving any top on the root vegetables draws moisture from the root, making the lose flavor and firmness. Wash and keep in an open contained with a wet towel on top. 

Fava Beans - Store favas in the refrigerator in a tightly sealed container. They'll last about a week.

Spring Onions - Store in your crisper. Best used within a week but may last a little longer.

Chrysanthemum Greens - Store these greens in a glass out on our counter with just a few inches of water in the bottom. The greens will last up to a week.

New potatoes - Store potatoes in a cool, well ventilated place. Don't wash the potatoes before storing as dampness promotes early spoilage.

8 Eatwell Farm Eggs
1/4 cup Cream or Yogurt or Creme Fraiche or Sour Cream
1 TB Olive Oil
Optional: 2 oz Smoked Salmon, broken apart into very small pieces
And/Or 2 oz of good Cheese, Feta would be nice with the Salmon, or you can use something like a strong Cheddar, Manchego, or Parmesan

1 TB Oil
Zest from one Orange
1/4 to 1/2 cup fresh Orange Juice
1/4 cup Extra Virgin Olive Oil
