Not really a recipe, but I love this combo. It is something I have always eaten and one of my favorite snacks in the summer. It is a great way to use up some leftover mashed potatoes. I cook the summer squash with a bit of minced garlic and onion and a combo of olive oil and butter. Made this for myself last week when I was home alone one night (a rare occasion I can tell you!) and it was so yummy, I just had to share.
