Eatwell Farmhouse Kitchen - Serves 6
This was so delicious! Since red tomatoes aren’t ready yet for my go to summer time salad with every meal, I thought it would be fun to incorporate the sweetness of summer stone fruit like peaches and nectarines. It worked out really nicely.
1/2 lb Cucumber, I like to only take half the peel off so it looks striped, and chopped small
1/2 lb Green Tomato, chopped small
1/4 lb Tomatillos, chopped small
Zest and Juice of 1 Lemon or Lime would be even better
2 TB Parsley, finely chopped
1 TB Olive Oil
1 clove Garlic, minced
2 Peaches, chopped not too small
Pinch of Red Pepper Flakes and Fennel Seeds
Salt and Pepper to taste
Mix everything in a bowl and serve.
