1 stick butter1/2 c brown sugar 1/4 c molasses 1 egg 1-1/4 c cooked, mashed winter squash 1-3/4 c flour 1 tsp baking soda 1/2 tsp salt

Preheat oven to 375 F.  Grease muffin pans (makes about a dozen regular-sized or 3 dozen mini, give or take). Beat butter until light & fluffy, then add sugar, molasses, egg & squash until smooth.  Combine dry ingredients then sift over bowl of wet ingredients.  Stir until just combined (add nuts at this point, if you wish).  Fill cups about 3/4 full then bake 20 min or until lightly browned.  Cool 5 min before removing from pan.
