2 Tbsp. olive oil2 sm. onions, sliced into thin rounds 1 garlic clove, finely chopped 1½ lbs. green beans, tipped & cut into 2" lengths 1 lg. ripe tomato, peeled, seeded, & diced 2 tsp. chopped parsley 2 tsp. chopped summer savory, dill, lovage, or other fresh herb salt & freshly ground pepper

Heat oil in a med./lg. skillet. Add onions & cook over med. heat until soft & translucent, about 4 min. Add garlic, beans, tomato & enough water to cover. Simmer until beans are tender, then add herbs & simmer 1-2 min. more. Season with salt & pepper to taste. Serve hot, tepid, or chilled.
