1 1/2 cups heavy cream6 oz. top quality aged Gorgonzola cheese 2 or 3 generous grates fresh nutmeg or 1/8 tsp. ground nutmeg 1 tsp. fresh thyme (or 1/2 tsp. dried) salt & white pepper
Combine cream, crumbled Gorgonzola, fresh thyme, & nutmeg. Cook gently until it reduces by one-fourth. Add salt & white pepper, to taste. Toss with steaming pasta. You may add sliced, peeled apples & walnuts to the above. Offer extra nutmeg. Serves 2.
