2 Tbsp. olive or vegetable oil½ cup golden raisins 1/3 cup red wine vinegar 1½ tsp chopped fresh thyme ¼ tsp salt 1 hd. cabbage, cored, & thinly sliced 1½ Tbsp. dark brown sugar 2 med. apples, diced 1 cup chopped onion (or leek) 1/3 cup dry red wine ¼ tsp freshly ground pepper
Heat oil in lg, deep pan over med-low heat. Add onions & sauté until soft, about 10 mins. Add remaining ingredients. Increase heat to med. & cover pan. Cook, stirring occasionally, for one hour. Cabbage should be soft but not mushy. If still crisp, continue to cook, checking every 10 mins or so. Taste. Add more salt and pepper, if desired. Serves 4.
