½ tsp. citrus zest*2 Tbsp. fresh juice* 1 Tbsp. sherry or champagne vinegar ¼ tsp. salt ¼ c. olive oil
Combine ingredients except oil. Whisk in oil & serve. Makes ½ cup of dressing.
*Marlene says, “I have made this with oranges, tangerines, mandarins, lemons & limes. It is great on salads that include nuts & goat cheese. We make extra to keep on hand, but it never lasts long!”
