2 Tbsp. minced lemon balm leaves1 tsp. lemon juice 1 c. butter, softened ⅔ c. sugar 1 egg 2⅓ c. all-purpose flour Lemon balm leaves (garnish)
In sm. dish, combine first two ingredients (press mixture with back of spoon to blend). In lg. mixing bowl, cream butter & sugar until light & fluffy. Beat in egg & lemon mixture. Gradually beat in flour & salt. Cover & refrigerate 3 hrs. or until firm. Roll in waxed paper. Preheat oven to 350. On waxed paper, cut into slices about ⅛" thick. Bake 8-10 min. on an un-greased cookie sheet. Will brown slightly around edges. Yields about 60 cookies.
