Pre-heat oven to 450. Scrub 2 large sweet potatoes, & slice into batons/fries. Toss in about 1 Tbsp. of canola oil until lightly coated. Lay on a sheet/pan with lip in a single layer. Cook in oven for 10 mins, then turn fries over. Bake for another 20 mins, turning fries so that all sides get crispy and fries are golden and tender. Take out of the oven, and sprinkle a little salt over them to taste. (Optional: sprinkle cayenne over the fries). Serve hot!
