2 cups loosely packed arugula, washed and patted dry1/4 cup walnuts 1 cups spinach leaves Salt and black pepper, to taste 2 Tbsp. Parmesan cheese (optional) 1 clove garlic, or to taste 1/4 cup olive oil

Combine the arugula, walnuts, spinach, garlic, cheese and salt and pepper in a food processor or blender until finely chopped. Gradually add the oil and process until the mixture is a smooth sauce. Serve on crusty bread or toss with pasta.
