½ lb. spinach, cleaned & roots removed½ Tbsp white sesame seeds 1 tsp Miso paste 2 tsp soy sauce- dark or white 2 tsp sugar or equiv. of preferred sweetner 1 tsp Mirin

Blanch spinach in boiling water with stalks left on (allow to boil just until bright green). Plunge into ice water to stop cooking process. Squeeze cool spinach to remove water. Roast sesame seeds until golden brown. Mix the roasted sesame seeds with the rest of the ingredients (not spinach). Pour sauce over spinach and enjoy.
