½ cup coarse fresh bread crumbs1 Tbsp. butter or oil 2 bunches greens, trimmed and washed 2 Tbsp. extra virgin olive, roasted peanut, or dark sesame oil Salt and freshly milled pepper

Sauté crumbs in butter in a small skillet until crisp and golden. Meanwhile, boil or simmer greens in a skillet of simmering salted water. Cook until bright green & tender, about 4 mins. Drain. Toss with oil, and season with salt & pepper. Serve with the bread crumbs sprinkled over the top. Serves 4.
