1 bunch spring onions1 tablespoon olive oil Sea salt Freshly ground black pepper

Heat oven to 375 degrees. Wash and trim onions, removing roots and the green tops. (Be sure to save the green tops for another dish!) Rub onions with olive oil and arrange in baking dish. Drizzle remaining olive oil. Sprinkle on salt and pepper. Turn onions over and sprinkle salt and pepper on other side. Roast for about 35 to 40 minutes, until onions are beginning to brown and are tender inside. Serve with pan juices.
