1 bag Eatwell stir-fry mix, tough kale stems removed and leaves finely shredded1 cup grated carrot 1/2 cup mint, finely shredded 1/3 cup dried cranberries 1/3 cup sunflower seeds 3 tablespoons olive oil 1 head green garlic, minced Sea salt and pepper to taste
This salad is a “chuck it all in” affair and will serve two as a meal or four as a side salad. Kale is a very strong leaf unlike lettuce, and it is best to massage the greens with the other ingredients to soften. One of the great things about this salad is that it gets better and better as the greens soften and the flavors mingle. You could even start eating this salad the day after it is made.
Mix all ingredients in a bowl and enjoy!
