Serves 4

1 bunch Chard
1 bunch Romaine Lettuce
3 oz shaved Pecorino Romano Cheese
3 TB Olive Oil
2 TB Balsamic Vinegar
1 crushed clove of Garlic
Salt and Pepper to taste

In the bottom of a salad bowl mix together the oil, vinegar, garlic, salt and pepper.  Clean and spin the romaine lettuce.  Tear the lettuce into bite sized pieces and place in the salad bowl.  Cut the stems out of the chard, clean and spin.  *As I always say, I find our chard stems are quite tender so I always include them in the recipes, I just chop them separately and small.  Stack the chard leaves and roll them into a tight cylinder.  Cut the cylinder into 1/4” slices, giving you long chard ribbon.  Place them in the salad bowl.  Shave 3 oz worth of cheese and place in salad bowl.  Toss all together, let sit for about 15 minutes then enjoy!
