From Lorraine's Eatwell Farmhouse Kitchen

Wednesday morning while Nigel and I were out doing an exploratory farm walk, I saw that we have loads of tomatoes on our roma tomato plants.  And I thought to myself, fried green tomatoes sound really good right now.  As it was only about 7:30 in the morning that meant it sounded like a good breakfast food, which led me to bacon (of course), fried potato cakes made with the leftover mashed potatoes, and fried eggs.  Since I am married to an English man, and the English Fry-Up is such a big deal there, I thought how fun it would be to do an Eatwell Farm Fry-Up, sort of England meets the South, meets the Farm!


Eatwell Farm Fry-Up Part 1-A*  Fried Green Tomatoes

I found an organic corn bread/corn muffin mix in my cupboard and use that for my tomatoes.  You can also use cornmeal.  Part 1 for me was frying up the bacon, setting it aside and using the bacon grease to cook everything else.  You can of course skip the bacon and use a good vegetable oil.  


Green Tomatoes - sliced about 1/2” thick

1 - 2 cups Cornmeal

1 - 2 cups Flour

2 Eggs beaten

Salt and Pepper

Put the flour, cornmeal, and eggs each into their own bowls.  Add salt and pepper to the eggs, and beat well.  Dip the sliced tomatoes in the flour, then the egg dip and then the cornmeal.  Fry in the bacon fat or vegetable oil until golden brown, flip and fry until the other side is golden.  Put on a plate and finish the rest of your fry-up.


Fry-Up Part 2  Fried Potato Cakes

This is such an excellent way to use up leftover mashed potatoes.  Great for dinner or breakfast!


2 cups Leftover Mashed Potatoes

Salt and Pepper

2 tsp chopped Tarragon

Flour and or cornmeal

1 or 2 Eggs

Since I had just finished the tomatoes I used the leftover egg dip from the tomatoes plus one more fresh egg.  Added them to the potatoes and mixed well.  I added the flour and cornmeal leftover from the tomatoes as well, added about half of what was left, mixing well and determining if I needed more.  I did, so I put in the rest.  Mixed it all very well, reheated the pan with the bacon grease and plopped a generous portion of potato mixture, flatten it gently so it isn’t really more than 1”  thick.  Fry until deliciously golden and it begins to firm just a bit, then carefully flip and cook until the other side is deliciously golden.  You should be able to a fit a few of them in your pan.  If you make them really large they are harder to flip.  Once they are done, put on a plate and move on to Fry-Up Part 3


Fry-Up Part 3 Fried Eggs

Not much to say here, other than you all know where to get the best eggs.  Fry in the pan after the potatoes.  Enjoy this Farm twist on the English Fry with fresh strawberries,  that’s what we did, or cooked collard greens and some salsa or sriracha.
