Arugula Pesto
2 cups loosely packed arugula, washed and patted dry 2 Tbsp. Parmesan cheese (optional)
1/4 cup walnuts 1 clove garlic, or to taste
1 cups spinach leaves 1/4 cup olive oil
Salt and black pepper, to taste
Combine the arugula, walnuts, spinach, garlic, cheese and salt and pepper in a food processor or blender until finely chopped. Gradually add the oil and process until the mixture is a smooth sauce. Serve on crusty bread or toss with pasta.
