1 Tbsp olive oil
2 large scallions or spring onions, thinly sliced, including a couple inches of green
1 Eatwell bag of sugar snap peas
Salt & fresh ground pepper to taste
1-2 Tbsp water
1-2 Tbsp chopped fresh thyme or other fresh herb
Saute the scallions in olive oil for 2 minutes.  Add peas, salt, pepper, & water and saute for ~2 minutes until peas are bright green and heated through. Take off the heat and add fresh herbs.
