2 large apples (Fujis should work just fine)
2 Tbsp. butter
juice of 1/2 lemon (or try 1/4 grapefruit)
1-1/2 Tbsp. maple syrup
1/2 c. water
1/4 c. walnuts, toasted
1/4 c. raisins, soaked in warm water
1/8 tsp. ground cardamom
1/8 tsp. saffron threads dissolved in 1/2 Tbsp water
Quarter and seed apples and place in water mixed with lemon or grapefruit juice.  Heat butter in heavy skillet.  Remove apple from lemon water, pat dry and grate into melted butter.  Cook gently until excess moisture is evaporated.  Drain raisins and add to the pan along with remaining ingredients.  Cook, stirring, until mixture is consistency of thick applesauce.
