one egg
1 1/2 c. all-purpose flour
1/2 pint buttermilk
1/3 c. raw sugar (plus extra for the top)
3 Tbsp. canola oil
1 Tbsp. baking powder
2 tsp. grated orange zest
1 tsp. salt
1/2 c. rolled oats
2 1/2 c. fruit and/or nuts (berries, cherries, peaches, raisins etc)
1 1/2 c. whole-wheat flour
Preheat the oven to 375F. Grease a cookie sheet and set aside. Beat the egg in a small bowl and mix well with the buttermilk. Add the oil and orange zest and mix to combine. In a large bowl, mix together the oats, flours, sugar, baking powder, and salt.
Stir the buttermilk mixture and oil mixture into the dry ingredients and mix just until the dough comes together. Do not overmix. Fold in the fruit and/or nuts. Scoop heaping tablespoons of the dough onto the prepared cookie sheet, sprinkle some sugar on top for good luck, and bake for 15-25 minutes, or until slightly golden and maybe a little crispy on top.
