Later in the fall we will be putting the first of this flavorful butternut squash in your box. the crops grows very well in our rich and deep soils. Jose and the crew windrowed the crop so that Roberto could cultivate all the other beds ready for fall planting. Leaving the crop in the field does let it mature better. We leave the squash on the plant as late as possible to allow all the nutrients for the leaves to enter the fruit. You can pick the crop a couple of weeks earlier, and it will look nicer, but allowing field maturation results in a richer and more delicious flesh.
