If you have never had bread made from freshly milled flour you are in for a treat. We have milled a few pounds to sell as samples at the Ferry Plaza Farmers Market in San Francisco for the past few weeks. The wheat is a hard red variety; Expresso. The protein has been tested at 12.3%. It makes great bread, delicious pancakes and waffles.
I have ordered a commercial stone ground mill from Meadow Mills in North Carolina. This will arrive in a week or so. It will enable us to grind very fine flour at the rate of 30 lbs per hour. This is still a small amount but it is a first step. Mills that grind hundreds of pounds per hour cost in excess of $10,000. This is not the time to be spending lots of money. If our grain CSA takes off then we hope to be able to afford the larger mill. So come and check out the new flour at the market on Saturday 15th November.
