six medium peaches and/or nectarines, or equivalent amount of apricots, berries, apples, or other fruit¼ tsp. cornstarch (more if fruit is very juicy) 1 Tbsp. fresh lemon juice ¼ cup of white sugar ( only if the fruit isn't sweet enough) as much chopped crystallized ginger as you like ½ cup all-purpose flour ½ cup firmly packed brown sugar ½ cup old-fashioned rolled oats ¼ tsp. salt ½ tsp. cinnamon ¼ tsp. ginger 3-4 Tbsp. cold unsalted butter, cut into small cubes
Preheat oven to 350 degrees. Slice the fruit into ½” chunks. Toss them gently in a large bowl with the cornstarch, the lemon juice, the chopped ginger and the sugar (if using). In a smaller bowl mix the flour, brown sugar, oats, salt, cinnamon and ground ginger. Add the butter, blending the mixture until it resembles coarse meal. Spread the peach (apricot/nectarine) mixture in a an 8x8 inch baking dish, sprinkle the topping evenly over it, and bake in the middle of a preheated 350F. Oven for 45-50 minutes or until the top is golden. Serve warm with vanilla ice cream.
