1 bunch Eatwell arugula (approx. 2½ c.)2 cloves garlic about ½ cup olive oil (more or less, to taste) ¼ c. freshly grated Parmesan cheese ½ tsp. kosher salt ½ tsp. freshly ground black pepper
Combine arugula & garlic in the bowl of a food processor. Pulse until finely chopped. With machine running, slowly add olive oil until smooth. Remove mixture from processor & stir in Parmesan cheese, salt, & pepper. Toss with pasta, use as a dip, or spread in bread dough before baking.
