Fast and delicious!

2 tbsp olive oil
4 cloves garlic, minced
1/4 cup sliced olives (green or black or both)
2 tbsp capers
4 ripe tomatoes, diced
1/4 cup chopped fresh parsley
1/2 teaspoon salt
fresh ground black pepper

Heat the oil in small saucepan on medium-low heat. Add the garlic and cook for 1 minute. Add the olives and capers  and cook for 1 to 2 minutes, until they are heated through. Add the tomatoes, parsley, salt, and pepper to taste and  cook on medium heat for about 5 minutes, until the tomatoes break down.
