Agustin is adding ten pounds of organic sugar to 275 gallons of whey from Cow Girl Creamery in Point Reyes. Some explanation may be needed.
The whey contains lacto bacillus which as all of us who love yogurt know aids digestion. To multiply they need simple carbohydrates like sugar. They multiply, produce CO2 and lactic acid. The acid reduces the pH of the whey and allows us to keep it in good condition for longer. The resulting whey has an increased population of good bacteria which when added to wheat and left to soak overnight keeps our chickens healthy. I believe this is one of the reasons that the eggs taste so good. We have three 275 gallon totes, one of which we use each week. We then get another delivery from Cow Girl via the Riverdog farm tanker truck.
