Takes a bit of time but ends up being really great! one large head cabbage, shredded 2 Tbsp. salt ½ c. fresh lemon juice ½ c. olive oil 2 Tbsp fresh ginger, minced one red onion ½ c. chopped mint leaves 1 ½ peppercorns
Toss the cabbage with the salt and let it stand for four hours. Prepare the onion ahead of time as well: salt it for and let it sit for one hour. Then soak it in ice water for an hour and drain. After the cabbage has sat for four hours, cover it with ice water and let it stand for one more hour. Rinse and drain. Make a dressing with the onion, lemon juice, olive oil, ginger, mint leaves and peppercorns. Refrigerate for several hours before serving.
